C.BIO is a great market/shop at Sant’Ambrogio in Florence. Here you will find fruit, vegetables, bread, eggs, milk, pasta, meat, olive oil, wine, sweets, sauces, jam and pickles, honey and delicatessen, as well as clothes, products for people and animals, for gardening and the home. C.BIO is a place where shopping is “good” because the raw materials are good for both body and soul, “Italian” because it comes from farms in our own territory, “honest” because each product is chosen in strict respect for a basic principle: sustainability. The idea behind C.BIO is basic: the food we eat must be good for us, providing nourishment to make us healthy and happy. It must be produced in total respect for its nature, using processing methods that are fully transparent at every stage. Although many farms, often small or even tiny, produce Good Things, it is sometimes hard to find them. C.BIO has a technical staff that searches for them, meets with them, and choses among them, to make them available to all in a partnership based on mutual exchange and the determination to eliminate any wastage.
C.BIO does not believe in great revolutions, but in little ones, and it assumes responsibility for them each day.
C.BIO, in collaboration with personnel from the Florentine restaurant Cibrèo – chefs, bakers and pastry-makers –directly processes flour from historic Tuscan, Sicilian and Italian species of grain, as well as fruit and vegetables, olive oil and wine, pasta, rice and everything to be found on its shelves. Every day, in the oven of the C.BIO bakery, dough is rising, schiacciata is baking, sweet and savory delicacies are cooking. The delicatessen section always offers pans, dishes and platters of food cooked in keeping with the season and with tradition: from zucchini to boiled potatoes to dishes inspired by the great Artusi, from Russian salad to good Mugello chicken, roasted and stewed, from veal with tuna sauce to chicken galantine, down to the irresistible lasagna and super-irresistible eggplant parmigiana.
In the Macelleria, the C.BIO butchery, you will find a careful selection of organic Chianine and Mugello beef and veal, as well as excellent Piemontese fassone, sold when ripe to perfection. There are sausages made from Casentine pigs raised in the wild state, as well as eggs and culinary specialties cooked directly by C.BIO. Always in collaboration with stock breeders and farmers, the Macelleria also offers ready-for-cooking meat, including IGP Sardinian lamb and selected game in season, excellent pork products, Cinta Senese pigs and More Romagnole from wonderful friends.
On the second floor too, C.BIO works for biodiversity. There are historic fruit trees, ancient aromatic herbs, roses and other old-time flowers, plants and seeds produced by organic farming techniques. On the big terrace you will find everything needed to practice truly knowledgeable gardening and horticulture: from soil to dried nettles and other preparations used to treat your plants. In the shade of the big tents you will find lawn chairs you can buy and benches you can sit on, letting time slip by as you fall in love with a plant or a flower.
